We raise our chickens on certified organic pasture. They are moved to fresh pasture daily, ensuring fresh grass and insects for them to eat each day. They are also fed a certified organic feed, which ensures the highest nutritional quality and supports certified organic grain farmers- furthering our efforts towards a more sustainable agricultural future.
We want to utilize the entire chicken, eliminating waste. In order to do this, we built a commercial kitchen on our farm. We slow simmer our broth for 24 hours, creating a gelatinous, delicious bone broth packed with nutrients and flavor.
Keeping with the system of utilizing the entire bird, we are able to sell decadent rendered fat (schmaltz). Schmaltz can add another layer of flavor to any savory dish. We use it in place of butter for most savory meals!
Chicken Liver Pâté
This smooth, savory dish is perfect on baguettes and crackers, served with jelly or a pickle platter. The pâté is made with our chicken livers, onion, spices, Brandy, and sealed with our schmaltz. Topped with a bay leaf for elevated flavor.
